  1. Here in Texas, it's brisket, slow cooked... for hours, over a mesquite fire. Some will use a rub of various spices and when done, should show a good 'salt line'. Barbecue sauce is served on the side. Chuck

  8. The fact that noone owns some of the ruminents I mentioned and so, who could be taxed in that regard? My thoughts are, some folks are trying to push global warming off on meat producing animals and make money in the process. All the 'cow tax' would do is put more farmers and ranchers out of business. I just see it as ridiculous. Why don't the 'greenies' do something about the un-regulated refineries on the other side of the Rio Grande that polute our air on this side of the river? Maybe, they could get countries that don't have regulations in regards to 'emissions' on factories and automobiles to get with the program. Naw, blame the cattle and sheep and pigs... it's easier.   9. You bet! Buck Owens and the Buckaroos, Dwight Yokum, really made a big impression on Country music in California. The recorded in California and brought the 'country' back to Country music. When I lived in California, back in the '70's, there were a lot of country music beer joints and is still popular in many parts of the Golden State. Then, there's the Lone star State, with it's so many contributors to Country. Everything had to go through Nashville until people like Waylon Jennings literally told Nashville to go F*** themselves and recorded on their own and recorded 'their' music. Nashville still, has a strong hold on country but, not like it did. Chuck
  10. What about all the other creatures we are trying to save that give-off the same type emissions? What about the masses of humanity who give-off similar emissions? We gonna tax them too? As long as there is a demand for beef, pork and milk, there will be cattle. How are the green folks going to get this point across to the folks in India who are very sensitive about their cattle? I think, some folks are drawing at straws and a bit knee-jerk. Chuck

  13. I prefer the 'un-amplified' country music. The older Bluegrass bands, hill music and the music out of the Carolinas. There are some newer groups like 'The Old Crow Medicine Show' and 'The Carolina Chocolate drops' who put-out some 'original' roots-based, Country music. Jimmy Dale Gilmour and Alvin Crow put-out some good stuff! Chuck

  16. I don't know which one I like better! Have you seen where now, the 'green' folks are lobbying to tax cattle, pig and sheep raisers to pay a tax on their livestock because they burp methane gas? Of course, the 'meat' producers are fighting it. Good grief! Chuck

  18. Nashville has gone 'cookie cutter' singers. They all sound alike, look alike and dress alike. One song sounds like the other. The easily recogniseable sounds of country music ended with the end of the 1980's. All the 'real' country singers went to Branson. or just faded away. Chuck
  19. I originally posted this to maybe, bring a chuckle or two. While reading our 'weekly' newspaper, I found this article and found it interesting: THE DARK SIDE Two of the richest animal rights groups in the country have recently made the news; PETA killed 95% of the dogs and cats left in their care in 2008 (VA Department of AG), and the Humane society of the United States (HSUS) contributed less than four percent of their $91.5 million budget to hands-on dog and cat shelters in 2007 (Center for Consumer Freedom). Both stories were presented to expose the hypocrisy of animal rights groups whose commercial fund raising depicts and depends on the image of the compassionate caring of kittens and puppies. But anybody who has worked for local humane societies, horse refuges, dog pounds or veterinary clinics understands the reason PETA is in the "euthanasia" business in a big way... the country is overrun by unwanted dogs and cats and horses. It is no easier for the director of a local Humane Society in Montana (not affiliated with HSUS) to euthanize the majority of the pets she accumulates monthly, than it is for the local veterinarian to agree to euthanize (usually at no charge) a litter of kittens or an unwanted horse. Nor do I think the people working in the back of PETA are callous about it. Just like the abandoned horse issue, somebody has to take responsibility and do the right thing and it ain't always pretty. Much ado is made about spaying and neutering our pets, about breeding too many horses. The fact remains, despite all our editorials, city laws, clinics and education, PETA put down 21,339 dogs and cats in the last ten years. All of us veterinarians, livestock people, slaughter horse buyers, city dog catchers, rendering plant truck drivers, and PETA workers choose to bear the responsibility of this dark side of the cute and cuddly companion animal world. The HSUS has smartly chosen to avoid the dark side. We down here in the trenches could use their help to fund more shelters, horse refuges, dog pounds, and carcass disposal. We'll still do the dirty work but their contributions would be a Godsend. I can tell you personally, working on a kill floor, eradicating livestock for disease purposes, putting down abandoned horses, or helping euthanize hundreds of companion animals in the back room of a humane shelter takes a toll on a person. You who do it have my compassion, admiration and respect... you are on the front line of humanity.
