Honestly, I think it's all rooted in a generation gone by. In the earlier 1900's there just wasn't as much affluence as there is now (speaking regarding the US, I know this is still happening in developing nations). People honestly didn't get enough to eat in Depression Era America. Because of this, the perception of a "healthy" person was one who WAS getting enough to eat, i.e. somebody with a few extra pounds on them. Nowadays, the perception has shifted and skinny/athletic builds are considered "healthy", driven in part by medical science and in part by fashion. Me and the lady roll in at around $150 a week for everything. That includes non-eating stuff like detergent and plastic bags, but doesn't include the occasional foray into town for a restaurant visit. Looks like a good program; damn, no distributors in Virginia. The only problem I'd have with the program would be that if I DID eat out for whatever reason, I'd come home, see that expensive-as-hell meal sitting in the fridge and think about how it'd just go to waste, and end up eating it too... I am a to-the-bone high wind tandem instructor WEENIE. I will run and hide if the turbulence becomes even moderate. Bad news is I've sat around and watch other folks make a lot of jumps and a lot of money on the days I didn't have the balls to jump. Good news is (so far, thank God) no injuries to me or a student. Now, to answer your question more directly, I'd be worried about me getting myself in trouble with hard S turns (sashaying? sp?) close to the ground. Instead, when I do get in conditions that favor turbulence close to the ground, I just try to minimize my exposure to the turbulence-producers, like staying well away from the hangars and treelines, and not flying over the tarmac (whenever possible).
