Very simple, very flavorful, very classy Fettucini with mushroom cream sauce Two packages of dried porcini mushrooms 1 shallot 2 tbs chopped parsley 1 cup of heavy cream salt, pepper, vegetable buillon to taste 1 package of fresh fettucini Put the mushrooms into a bowl and pour about a cup of boiling water on them. Let them reconstitute for at least an hour. Reserving the liquid, drain the mushrooms, pick through them and chop. Start cooking the shallots over moderate heat until transparent, add mushrooms, cook for a minute then add the the reserved liquid through a fine strainer. Cook over low heat until the liquid is reduced by half, then add the cream and reduced it further by half. Add the parsley, (reserve some for garnish) buillon, salt and pepper to taste. Add the cooked pasta, serve with shaved parmesan and parsley. Don't forget dessert, a creme brulee is a good idea or something chocolatey.
