Velocity Vs Extreme's

Better canopy? Hmm, that's a very subjective question. I think that the VX and the Velocity (I've never flown an FX) are both very nice canopies, and with the right pilot below them, can be flown equally well. Many of the reasons I've heard for choosing one or the other have boiled down to small personal preferences.

I will say that Velocity's that I've flown have opened better than the VX's I've flown (and Xaos' open better than either....).

The velocity seems to be more radical than the FX (i've never jumped a VX), dives for longer and swoops further. I thought the velocity had a lighter front riser pressure (comparing FX109 with Ve 111).
Openings wise I have only jumped 1 FX (a 109) and it opened quite nicely - perhaps a little quickly. I have jumped various velocities (120 - 96) and they've all opened OK, certainly accetable for camera jumping which is my main thing.
I have heard various people comment on bad openings associated with the VX - I've never jumped one so can't comment.
I think in an ideal world if you ultimately want to be jumping a Velocity or VX then you would consider doing a lot of jumps on a FX as a stepping stone along the way.
