How do we know, for a fact, these men actually said those things? So much of our history has been 're-worked'!

Grant put it into his personal memoirs, that he published before dying in 1886. It's pretty real.

I'd bet the Geronimo quote is a joke, though

Well... Grant's memoirs are his own work. He wrote them out in longhand; then they were sent off to the printer, who set them in type. They were published shortly after his death.
I don't think Geronimo was literate; but in any event, it was a pun on the OP.

Grant was trying to get over a drastic drop in popularity due to accusations of mis-conduct flying around.

Geronimo never said that. I was messin' with Andy.:D
