I suppose for the devout with some imagination, you can believe that the rubble might be the petrified remains of the boat. Not sure why they would build another to confuse the picture, though. As you say, Rainbows were called evidence since they're God's promise that the flood will never happen again, it was claimed that there were no rainbows prior to the flood.
