I know of a few studies where evolution within a species has been observed, but I have never heard of a species "evolving" into another species. Darwins Finches is a good example of this. Generations following the evolved finches "evolved" back to the regular finch.

Evolution refers to bioligical change over generations. It is not limited to speciation(the changing of one species into another). Life is compromised of a DNA code of four amino acids A,C,G and T(like the computer codes of 0,1's), different combinations of these four letter determine protein manufacturing which in turn determine bodily function. With reproduction the genetic code is copied. But it is never copied perfectly. One reason for example is the continual bombardment of the Earth by cosmic rays. As a a result the code of a descentdent is never the same as the parent. The code mutates. This is evolution, that this occurs is as in as much doubt as gravity.
The idea that nature selects mutants which are best adapted to their enviroment is the Darwinian theory of natural selection. This is seperate from the fact of evolution. Much genetic engineering is only possible because all forms of life on this planet share common DNA as they are descended from a common ancestor. The part of the code for many functions of the body are exactly the same across countless living things. As the code mutates species change. At what point do we have a new species? Such a point is necessarily arbitrary. However the standard accepted point in biology is when two organisms cannot generate fertile offsprings through mating. This has been observed many times. One of the most well known cases is in fruit fly research. We can see evolution happen there becuase they reproduce so quickly. Surely anyone familiar with biology will know of the research of Dobzahsky and Pavlovsky. But if you are not look them up in Nature and you will see clearly observed instances of speciation. The fact that you are not aware of such research does not mean it does not exist.

For example, the Hindus have creation beginning all over again at the end of each "kalpa" — a single day to Brahma — brought about by flames from the fangs of Sesha, a serpent. The Maori culture insists that New Zealand was dragged into existence from the bottom of the ocean. Shinto doctrine says that the world began with a giant reed from chaos that somehow became the god Kuni-Toko-Tachi, followed by Yin and Yang, the "Fertile Pair" who peopled the Earth; talk about being busy! The Hindus have several creation stories; one is of the World Egg, another is that the giant Purusha was killed by other gods, and his various body parts became parts of the Earth; I won't dwell on details. Greek stories say that Nyx, a giant bird with black wings, was impregnated by other gods, then laid a silver egg, and that gave us the Earth. In old Egypt, there was a really big Cosmic Egg from somewhere, and before that the Sumerians believed that at a drunken party, Nimnah — Mother Earth — fashioned humans out of clay; the inebriety was responsible for her fumbling, and thus for our imperfections.
All of these sound just as good as the Christian views, to me..

In science things are considered to be facts when they exactly match observations consistently. evolution meets this criteria. Evolution is observed continually both in the lab and in the real world. One example, treatments of the HIV virus has been hampered becuase it has evolved several times. You can deny that as much as you can deny the world is not flat.
