The water couldn't be trusted so it was "disinfected" or whatever with Gin. You know what else is good for you? Buttered popcorn, Alfredo pasta, and Pizza. In very early times, mead, wine, and finally beer were one of the few safe things to drink - the alcohol was sufficient to kill the bacteria in the water, and water contamination from human and animal wastes was very common. The people with ADH could drink wine and beer, and thus survived longer than the people who had to drink the contaminated water. Evolution in action. Interestingly, while most of Europe was into the wine and beer thing, much of Asia had tea rituals - the boiling water was what killed the bacteria in that case. ADH wasn't much use to them so it wasn't selected for. To this day, some Asian people cannot produce ADH, and are made sick by alcohol. So in a very real sense we (or at least most western cultures) evolved the ability to drink beer, over hundreds of thousands of years. Seems a shame to waste all that adaptation . . . Oh, not all Asians lack ADH - but many do. Even the ones that lack it can still drink it, but it's not that pleasant to do so. From a tutorial on the issue (www.uams.edu/m2003/Behave/Modules/Alcohol%202001.doc) - "In most Asian cultures the overall incidence of alcohol related disorders is considerably lower than other cultures. Of significance is the absence of aldehyde dehydrogenase in as many as 50% of Japanese, Chinese, and Korean individuals. Alcohol use by affected individuals results in an antabuse like reaction. On the other hand....there was my trip out to the country to do some work and visit a friends mother in law. She had to be in her 50's or 60's and out drank 5 of us when it came to Soju.
