I will still eat all the fruit and stuff but I am looking for some interesting recipes for some healthy food. any favorites youd care to post? heres my fav light lunch recipe 2 cup frozen spinach 1 tomato; sliced thinly feta cheese pita bread; cut into two round pieces lay pita on a cooking sheet. cook spinach (DUH!) drain and spread over pita put tomatoes over spinach sprinlke in feta cheese. heat until cheese is kinda melty. Really awesome. 1 bag lentils 1 can Ro-tel tomatoes (or equivalent) 1 cut up onion, browned 1 cup or a little more dry barley Put these all in a pot with a bunch of water (as you can tell, I'm a very careful cooker). Roughly double the thickness of the solids with water (i.e. if the stuff is 2" at the bottom of the pot, cover with water so that it's 2" over the top). Salt, pepper, rosemary, beef bouillion to taste Cook about 1 hours. add 1/2 cup carrots, chopped (optional), cook another 1/2 - 1 hour. I like it almost as well cold as hot. jtval 0 #3 September 1, 2003 I grabbed a decent seasame oil dressing for stir fry. its simple but I like soy sauce but I was getting sick of it LOL 3 parts sesame oil 1 part soy 1 part honey get some stri fry veggies AKA snow pea's water chestnuts mushrooms etc. then add chick or beef. This was the one I had from her at the DZ and we used broccoli for the dippin part (exactly how Hol wrote it). Garlic Cilantro Garlic Walnuts or pine nuts Seasalt basil Olive oil Ginger Garlic Lemon or lime juice Spinach Garlic I think she wanted us to realize there was a LOT of garlic in there... I noticed the one you guys had, had the habanero chilis in it, this was just a bit different... take the time to appreciate the people around you. You should be able to find this in the frozen health food section. They come in a bag. Boil water, put a few in and cook for 3 minutes. Drain and put sea salt over them. Sit in front of the boob-tube and suck the pea-shaped beans out of the pods. It's better than popcorn. Viking 0 #13 September 3, 2003 Kitchen Sink Omellette(sp) 5 X-Large Eggs (large will do if your cheap ) 1/2 Green bell pepper 1/4 Brown onion 1/2 Tomato 1 Slice Smoked Ham Veggy Oil Seasoning Salt Salsa Sour Cream Fav Cheese Tabaso/Fav Hot Suace Large Frying Pan First roughly chop up all the veggies and put in a bowl, put one table spoon of veggy oil and mix it all together. then whip the eggs with a wisk until they are nice a bubbly. Next take the Smoked ham and lay bite sized pieces on the pan. Brown both sides. Then dump the veggies and oil. Let that cook till the onions are slightly browned. By now the kitchen should be filled a very nice smell Pour the eggs on, and then sprinkle the seasoning salt on the uncooked eggs. Keep flipping the eggs until both sides are a very light brown. Grate your fav cheese over the eggs while still on the pan and then put them on a large plate. Smear sour cream on one half and fold the other half over. Put Tabasco/Fav Hot suace and Salsa to taste. Except since I don't have the ease of the bowl and microwave readily available at work I just put them in a baggie, still frozen, and by lunch time they are ready to go (leave them out of the fridge), and don't put salt on them until you are ready to chow down. Shotgun 1 #18 September 3, 2003 One of my favorite meals is soft tacos made with Veggie Ground Round (which tastes a lot like ground beef, but it's made from soy protein and it's fat-free). I usually saute some chopped onions and green peppers in a frying pan, then add one package of Veggie Ground Round (you only have to heat it, because it's pre-cooked). Then I'll add one package of McCormick Taco Seasoning and 3/4 cup water and simmer until most of the water has evaporated. Then you just scoop it onto warmed tortillas and add whatever toppings - cheese, tomato, onion, lettuce, avocado - sometimes I'll add carrots, cucumbers or bean sprouts... It's so easy to make, and so yummy! And I think it might even be good for you. (You can also buy the Mexican Veggie Ground Round and then you don't have to add the taco seasoning, but I like the taste better when I add the seasoning because then the sauted onions and peppers get cooked in the seasoning too.) Bake the hamburger patty in the oven, flipping every few minutes and draining the grease off of it. Use wheat or rye bread instead of the white hamburger bun, and mustard (not mayo or ketchup). (and very simple to make). Quote 1 (No. 2) can tomatoes 1 small onion 1/2 lb. bacon 2 cans whole kernel corn 1 tsp. sugar Put tomatoes in p ot. Beat tomatoes with whip. Boil. Chop bacon fine and fry. Add to tomatoes. Saute onions; add to tomato mixture. Simmer for 15 minutes. Add corn. Add 1 teaspoon sugar. Bring to a boil. Mix together flour, salt and pepper on a large plate. Dredge veal in flour, coating both sides and patting off any excess. 2. Coat a large, nonstick skillet with cooking spray; set over high heat. Sauté veal on both sides until nicely browned and firm, about 2 minutes per side (sauté in batches, if necessary, recoating the pan with cooking spray between each batch); remove and set aside. 3.
