How do you cook your meat?

Different with different meat. Steaks medium-well, hamburgers medium-well or well done, all poultry and fish very well done. I think the only thing I can eat medium is steak, and it's still not something I like to do.
A friend of mine always orders his rare, and I think it's nauseating!

Anything more then medium rare is blasphemy.

As to HOW I cook it, I've been a big fan of pan searing lately, and a grill only beats this if we're using real charcoal. If I've only got a gas grill, I'll pan sear in the kitchen.

{edited to add} I presume, since this is AggieDave asking the question, that we're talking about beef... not any other two or four legged animals.:P

In other words, anything from medium-rare (warm pink center) to very rare (cold red center). It just depends on the cut and quality of the meat. A ribeye, medium rare. A choice KC strip, rare. A filet mignon, bloody.

Cooking method and time are very much dependent upon the quality/type of the meat, as well as the cuisine style used in the meal.

Newsflash for AggieDave -- there ARE other types of meet besides beef.

Faster horses, younger women, older whiskey, more money.

Depends on the cut and seasoning. For crappy round steaks, medium-well, for average ribeyes rare-medium rare. For high quality backstrap, seared on the outside and slightly warmed on the inside.

Pork - medium
Poultry - well done
Tuna - raw

As rare as they'll cook it.......never fails to gross out whoever I'm having dinner with.

I also eat 4-6 oz of raw steak twice a week. I've read that raw meat has less fat than cooked, but you still have to worry about the parasites. [:/] Haven't gotten sick yet, though.

I'm with you, Sunshine. If there is any red juice on my plate, it makes me nauseous. Better yet, skip the steak and cook me chicken, pork or fish.

Oh, trust me, I know that. Deer, dove, turkey...basically if its hunted in Texas I've had it and like it. It goes beyond that too. Gator? Good, I like it deep fried. Buffalo, give me a good cut and I'll give you one hell of a nice meal...the list could go on.B|

I'm pretty much the same way; I don't eat steak often. Hamburgers are good, though. Much better source of red meat, in my opinion (not as tough).

I like to use a smoker. I used to be a charcoal grill person, but it dries it out too much. Even for hamburgers, the meat stays juicier. For ribs, the catch pan makes a great sauce also.

Some people prefer rare steaks when using charcoal to keep it from drying out. A smoker eliminates this problem. Cook til medium.

I get a charcoal grill WHITE HOT, Season my strip or ribeye with plenty of Tony Chachere's Cajun Seasoning, set it on the grill for a minute and a half on each side, and eat it with a Ceaser Salad.
