flyangel2 2 #2 November 24, 2003 One Thanksgiving I was invited over to a male friends house for the Thanksgiving feast. He had never cooked a turkey before, and I told him to just do the bag thing. Needless to say, I didn't tell him how to put the turkey in the bag. I just thought that was a no brainier. After arriving to my friend’s house, he takes the turkey out of the oven and asked me to carve it, since he's never done that before. I cut open the plastic cooking bag and start to cut on the turkey, when I hit bone where I think the breast should be. Come to find out, my friend had put the turkey in the bag breast side down. That turkey was the best turkey I had ever had. Now I cook all my turkeys breast side down. Keeps the white meat nice and moist. A few nights later while watching some late talk show, the host was asking Nicole Kidman what she did for Thanksgiving. She explained how they did a family dinner and how they cook their turkey. But, I generally cover the turkey in cheesecloth and foil for most of the cooking. Regularly basting & injecting, the cheesecloth seems to hold more moisture and keep the breasts moist. then, at the end, I remove the cheesecloth for like the last hour or so and continually baste with butter to crisp. Of course, all times depend on size of the bird. But, i've had meat from turkeys baked breast down and they have also been very good.
