Moving to Missouri after winter, we should get together. I miss Chop Chop, he is my Boogie Buddy and I can't wait to meet you!

Sure.... I actually just made it up... So you can add, or eliminate on your taste.
All I did was chopped up some pieces of the turkey (white and dark meat) into small cm pieces, about two cups worth.
Then I added 4 eggs.
Then I added italian seasoning..
Garlic Salt or powder..
Paprika..
dried parsley..
about a teaspoon of olive oil...
Tabasco Sauce..
and crushed ritz crackers for the breadcrumbs..(any breadcrumbs will do, about a half cup of them)
and a tablespoon of margarine.
I just mixed it and squished it all together.
patted and shaped into like hamburger patties.
Put a little olive oil & some more italian seasoning directly in the pan on medium to medium low heat.
Heat both sides till brown, top with a little cheese of your choice while still hot, and Walla!! ... Yummy Turkey Pancakes! .... Yum, Yum!!
Whew!! ... Wow that seemed like alot of work, but chopchop is worth the time and effort.
P.S. Use any sause of your choice for dipping ... I usually have some left over gravy handy.
