In those days, sneezing was "the body's way or trying to get rid of demons possessing you to cause sin", so when someone sneezed, you blessed them to help them exorcise their would be "possessors". We say bless you after someone sneezes because sneezing fits are a symptom of the final stages of Bubonic Plague. Thus if someone sneezed it became habit to bless them as they were likely to die. You know that children’s nursery rhyme - Ring-a-ring-a-roses? That’s about the plague. The ring of roses was a reference to the ring of spots and blisters around sufferers mouth and nose. The “pocket full of posy’s” is a reference to the pot-puree people used to carry around as it was a common belief that it was "mal-air" or bad air which caused the plague.
