TheAnvil 0 #1 July 8, 2004 ...a kickass stew. Dried Fruit Soup. It's really unusual. An Azerbeijani or Persian recipe I do believe. Tasted so good I thought I would share it. Anyway, here's the Recipe: 2 small onions 1/2 pound of ground beef 1 cup dried apricots 1 cup dried prunes 1/2 cup rice 1/4 cup chopped walnuts 1/4 cup chick peas 1/2 cup vinegar 1/3 cup sugar 1 cup parsley cinnamon dried mint black pepper salt Directions: grate one onion and combine with the ground beef. Add 1/4 tsp each cinnamon and pepper and 1/2 tsp salt. Mix thoroughly. Add 8 cups water and 1/2 cup rice to soup pot and start boiling for 15 min. While that's boiling, dice the other onion and sautee in butter until tender and just about to turn brown. Form meat into meatballs just a bit smaller than walnuts. After the water/rice has been on for 15 min add the prunes, decrease heat slightly, then cook for another 15 minutes. Add meatballs, onion, parsley, apricots, chick peas, and walnuts. Cook for about 20 minutes. Then add the vinegar and sugar and cook for another 15 min. When the soup is just about to come off of the burner, take 1 tbsp dried mint flakes and 1/4 tsp each of cinnamon and black pepper. Rub it between hands over the pot to powderize it until all the mixture has entered the soup. Remove from heat, let sit for about 5 minutes, and then serve. Hey Pat! - I've only drinking tequila on hand - Herradura Reposado, Patron Blanco, and Herradura Anejo. And some other brand I got in Mexico but haven't cracked. No cooking tequila here in Casa del Anvil.
