Rice Pudding 2 C Sugar 3 eggs 1 gallon whole milk 4 tablespoons vanilla extract 2 1/2 cups Carolina Rice Put eggs and milk together in a big pot on stove. Add sugar, and heat until sugar disolves. Add vanilla and rice, and cook over medium heat, stirring frequently. Don't forget to stir. Takes about 1 hour to cook. Pudding thickens as it cooks, and also as it refridgerates. d_squared431 0 #3 August 14, 2004 I have been eating and making this stuff for years and the trick to a good rice pudding is to separate the egg whites and yoke. (Only use the egg whites) Don't put the egg whites in until last. You cook the rice and then pour milk in and bring to a boil stirring all the time so the milk doesn't burn on the bottom of the pot. Then add vanilla extract. Put a dash of cinnamon in it as well. Add sugar but taste before you use a full 2 cups or it will might be to sweet. When you notice it has gotten a bit thicker then put it in a big bowl. Let cool for 15 minute 1/2 hr and the beat the egg whites until they look like you have a bowl of fluffy whipped stuff. Then slowly put the egg whites in. Careful the rice isn't too hot or the egg whites will cook. Mix it together really well then sprinkle more cinnamon on top and put in the frig.
