Cheese goes bad in the sense that it may no longer be enjoyable to eat - be it furry or a funky flavor.
Given that it's 100cals of fat per ounce, I make sure it's good tasting and cut off the suspect bits.

The best way to know if your camembert is fait enough (ie mature enough and gets runny) is to lay it on a plate at a slight incline.
