how do you cook your turkey?

Me? I cook it over indirect heat in a good old-fashioned Weber charcoal bbq grill.. I get a nice golden moist turkey every time.. In my stuffing, I use bits of apple, walnuts and the giblets.. Side dishes are usually cranberry sauce, garlic mashed potatoes, a green bean casserole and some sweet potatoes..

What are you all having on Thursday as the Dolphins beat the Cowboys? :S

Baked in a bag, in the oven, for a long time, or until golden brown, which ever comes first. I add a bit of cranberry wine to the basting sauce before I put it in the oven, I also throw in a bit of brown sugar, a very small amount of garlic salt, some fresh veggies, one whole lemon-quartered, depending on how the night before went, I have even used the little bag that comes inside for stuffing (unintentionally) otherwise, I make giblet gravy and mix the stuffing in that.
I'm not usually into the whole 3-way thing, but you got me a little excited with that. - Skymama

I already posted this, but since I like that way I cook my turkey, I'll just do a cut and paste.




One Thanksgiving I was invited over to a male friends house for the Thanksgiving feast. He had never cooked a turkey before, and I told him to just do the bag thing. Needless to say, I didn't tell him how to put the turkey in the bag. I just thought that was a no brainier.
After arriving to my friend’s house, he takes the turkey out of the oven and asked me to carve it, since he's never done that before. I cut open the plastic cooking bag and start to cut on the turkey, when I hit bone where I think the breast should be. Come to find out, my friend had put the turkey in the bag breast side down. That turkey was the best turkey I had ever had. Now I cook all my turkeys breast side down. Keeps the white meat nice and moist.
A few nights later while watching some late talk show, the host was asking Nicole Kidman what she did for Thanksgiving. She explained how they did a family dinner and how they cook their turkey. She too does the breast down trick. So now I cook like a super star.

I've smoked mine for the last few years. You get these HUGE rolling papers and then... oh wait, that's something totally different..

You brine the turkey for like 3 days and then let it drain and smoke it for like 6-10 hours. It's so tender and juicy.

I have a smoker. Should I bring it?

Shannon, i think we missed the window for brining it for 3 days so we'll stick with the grill but I sure like the idea of cooking it breast down.. That makes a lot of sense as long as those firm full breasts are properly protected.. :P

This is what you do. Tomorrow morning, mix the following:

1 1/2 cups kosher salt (Note: not regular salt. Kosher is alittle sweeter)
1 1/2 cups brown sugar
10 cloves
1 tablespoon pepper
1 1/2 gallons of apple cider
Rind from one orange (no pith)
a couple of tablespoons of ground sage

Boil it and then let it simmer for about 20 minutes. Let it cool down.

Then, take a cleaned and cool turkey and soak it in the brine. Let it go till tomorrow. Ensure the whole turkey is covered. (note: use a glass or stainless steel container).

Then you roast the bird as normal. Note that basting this bird is fantastic.

I know it sounds bad - apple cider and salt soaked turkey. It is absolutely splendid.

I don't know, ask my mom. :P They never let me cook on Thanksgiving anyway. When I asked her what I should bring on Thursday, she said, "Honey, you just bring the vegetable tray." They don't trust me.

We're skipping the turkey and doing tri-tip at Bob and Patti Krieberg's (AKA "Home away from home for half the skydivers in the Bay area"), but if I wasgoing to cook a turkey, the Weber way rocks. Haven't done that in years, mainly cuz Mom was pissed off that mine was better than hers...;)

I know. I've had to work hard at that too. I have a pretty good racquet going on, now I don't have to do anything but cut a few vegetables and show up and drink the alcohol. ;)
