For you budding Jello show makers - science comes through

Recommended Posts

Okay, they started with a false premise:

Quote

Basic Jell-O Shot Recipe
3 oz. Jell-O (one 4-serving package)
8 oz. boiling water
3 oz. cold water
5 oz. vodka

Who adds cold water? All cold water is to be replaced with vodka... but I'll keep reading.

Quote

Ultimately we determined that the breaking point of a Jell-O shot – the point at which the gelatin began to lose its structural integrity (i.e., ability to gel and hold its shape) is somewhere between 19 and 20 oz. of vodka per 3 oz. package of Jell-O powder.

That is, indeed a lot of vodka.

Oh but here's the best news:
Quote

Sugar Free
At the same time, we were conducting similar tests using sugar-free Jell-O. The significant properties of the sugar-free compared to regular Jell-O are that the sugar-free mix has a much smaller volume (0.3 oz. per 4 servings vs. 3 oz.) of powder. It also requires less boiling water (3 oz. vs. 4 oz.) to dissolve completely, and for some reason is capable of “absorbing” more liquid while retaining its ability to gel. Because of these factors, it is possible to achieve a slightly higher alcohol concentration by using sugar-free Jell-O.

I *knew* there was a reason I preferred Sugar-Free.

Damn, why couldn't I ever come up with cool experiments like this for Science Fair in high school?>:(

Actually the first recipe is how I used to make them. :|

The only time I wouldn't do a 1:1 alcohol:water ratio is if I were using something other than vodka or rum. 1:1 with tequila does tend to produce some nasty-strong jello shots.

Otherwise, I think 1:1 gives a nice taste to alcohol content balance.

You have great timing! I am making jell-o shots tonight for our end of the year party on Saturday and I have never made them before. This info sure comes in handy. :D

If you haven't already bought cups, I've found the 2-oz ones are just right. 1 oz is way too small and hard to get your tongue in to get all the Jello goodness out. :S

She said what I was going to say. Don't make them too strong or after the first round people won't eat another one. Use a "white liquor" causes less flavor crossover and doesn't interfere with the jellos color.. much.

The link at the bottom that studied how many condoms you can wear at once is pretty funny!

Can Liquor Freeze?

It's probably the water and gelatin that's freezing, but what you end up with is a weird slushy mass of weird consistency. Instead of the Jello nicely dissolving in your mouth, it just stays kind of lumpy. It ends up being REALLY difficult to eat without choking.

I didn't make the shots at LP, so I don't know exactly what their water/alcohol ratio was.

Ah, fuck it. As long as it stays in the cup you can still drink it!
;)

Unless they get frozen (we had a few get frozen at LP this year). Ever try to eat frozen Jello shots? They do *not* go down easy.[:/]

You complainin' about our frozen jello shots??? Hmmm ... me thinks next year you don't get any ... :P

Had we got our shit together and made them on Wednesday or Thursday, we would have had time to gel them in our trailers but, we only had one day so Stinky came to rescue and let us use the freezer in the bar.

Jellosicles are better than no jello at all!

1:1 for the vodka and rum
about 0.75:1 for the tequila (1:1 is WAY too strong)

Come make them with us next year - it's an experience (and don't listen to Joy when she says it's okay to drink them warm ...)

SOOOOOO not complaining about them! and yes, perhaps next year I should come help make them. I wasn't alerted to shot-making party this year - next year I know just to follow your boobies. ;)

I know how hard it is to keep anything chilled to just the right temperature at LP (the soggy bag of salad mix I threw out at the end was perfect evidence of that!).

They were wonderful once they had a bit of time outside of the cooler. And oh-so-much fun to use for target practice during the Crack Choir performance. :D

We'll probably use the freezers again next year but we'll take them out a little sooner so they have a bit of time to thaw. And so we can test them ... a few times ... just to be sure they're okay for human consumption.

Yep, I think I did pretty good for an LP virgin. Even if I didn't know how to pronounce "toque.":P

You know where to find us ... hang a left at Byron and you'll be in Canada ... we'll probably be on the Chesterfield.
