grue 1 #1 November 8, 2005 So here it is. I call it the Purgatory Burger, because a lot of my friends consider it too hot to eat. The real men and women out there will enjoy it. You will need: 95% lean ground beef Frank's Red Hot sauce, or your favourite hot sauce Fresh green chilis A block of pepper jack cheese Pineapple (either canned rings, or fresh sliced) Butter Cayenne powder First, divide up the Frank's into two equal amounts. To one of these batches, add a little bit of butter to cut the edge, but add a touch of cayenne to retain the flavour. Keep the other batch "naked" Chop up the green chilis and mix with the ground beef in a ratio you find acceptable. This varies from person to person, but I think one chili per patty's worth of meat works well. Form the patties by hand, and smother liberally with Frank's on one side, then place this side up on the grill. When the time comes to flip the burgers, add Frank's to the new "top" side, again smothering decently, so the sauce will cook into the meat. At this time, you should also put the pineapple slices on the grill. Keep an eye on it, you don't want it to dry out, but you want the sugars to caramelise. Approximately 3/4 through the second side's cooking, move the pineapple on top of the burgers, pour on the modified Frank's, and slap a thick slice of pepper jack on top of this. When the cheese begins to melt, place the buns on the grill so they're toasted just as the cheese finishes melting, at which point you can assemble the burgers in the normal fashion and serve.cavete terrae.
