I can run to the store and then home at lunch time and throw stuff in the crockpot, I just need a new idea. So who's got the best rainy day soup/stew recipe? Kris 0 #2 October 19, 2005 Kris's Famous Chicken Enchilada Soup! -------------------------------------------- 2 10oz cans cream of chicken soup 1 10oz can enchilada sauce 1 can of milk 1 can of water 2 cans diced white chicken (cheap is really gooood because it gets all stringy) 1/2 - 3/4 of a large onion, diced. Mix everything together in a soup pot or crock pot. In a soup pot, bring to a boil and then reduce to low and let it simmer for about 30 mins. If you crockpot it, let it go for at least 90 minutes, on low. Then throw meat on top of the veggies. Add water till its covering the meat. Throw in a bit of seasoning. Cook till tonight. Ashtanga 0 #5 October 19, 2005 3 carrots, sliced 3 stalks celery, sliced 1 large onion, cut into thin wedges 3 cups cubed cooked chicken 1 (10 3/4-ounce) can condensed cream of celery soup 3/4 cup chicken broth Place vegetables in the bottom of slow cooker. NWFlyer 2 #15 October 19, 2005 Here's a recipe for NC style Pork BBQ that my friend sent me (complete with her commentary on the cooking process.... she's just *touch* neurotic). I did have the resulting BBQ and it's quite tasty. *************** Okay, so my friend Alan is sort of religious about North Carolina barbecue, which is what this is, and which is apparently different from all other kinds of barbecue. I don't know. We didn't have barbecue where I grew up. His fervor doesn't extend, apparently, to exact measurements, so I just had to wing it. It worked out fine. 1 pork butt apple cider vinegar garlic powder season salt pepper honey (at least half a honey bear if not more...I used more) a medium-size bottle of bbq sauce, or more if you want more 1) Get up at the crack of dawn and wrassle the pork butt from the refrigerator and plop it in the crock-pot, fatty side up. Which side is the fatty side will be all too apparent. 2) Cover the butt liberally with apple cider vinegar, like a cup and a half at least. 3) Sprinkle garlic powder, season salt, and pepper on top of the be-cidered butt. Again, liberally. 4) Pour at least a cup of honey over the dry spices on top of the butt. 5) Pour half the bottle of BBQ sauce on top of the honey. Obviously this is going to sort of slide off and be goopy at the bottom of the pot. Pay it no mind and set it on low and leave it in there for at least eight hours. You will worry. You will check the butt. I spooned some of the glop over it every hour or so but I don't know how neccesary that was. I didn't think it would EVER get fork-tender but it did, as promised. At hour eight or nine go in there with a turkey baster or a big spoon and try to skim off as much of the liquid fat as you can. As Alan said, "Don't worry, there's still plenty." Ew. After you've spooned off the fat, pour on another cup or so of honey and the rest of the bottle of BBQ sauce. Leave it in there, again on low, for at least another hour. After that hour you should be able to pull it apart with two forks. This is sort of weird and gross but it does happen eventually even though you think it won't. Mix it all up so that it's uniform, plop it on some soft rolls (or just eat it with a fork) and accept the marriage proposals that roll in. sleddog 0 #18 October 19, 2005 Not a soup or stew recipe, but if you have another crockpot available, this is a fantastic desert! 2 cans favorite pie filling mix (Cherry, Blueberry, Peach or whatever) 1 white cake mix 1 stick butter 1 pkg chopped Pecans Empty both cans pie filling into crock pot, pour the cake mix on top, do not stir. cut butter into pattys & place on top of the cake mix. Sprinkle Pecans on top of butter. Turn crockpot on low for two hours, serve while still warm.... I guarantee, it'll tickle your innerds! MMmmmm........ Im having chicken soup and stickey rice. you can pretty much put any liquid in with meat and potatoes and let it cook long enough and it be yummy.
