If I'm not mistaken they are sheep balls. Right?

Actually, they are "Bull Balls":o

Cleaned, de-veined, tenderized "OUCH"B|, then breaded.

Slice 'em about 1/2" thick. Run through and egg wash. Dust well with flour and corn meal. I like to put some cayenne pepper in with the flour and corn meal. Deep fry till golden brown. A little Louisiana hot sauce... yum-yum!
edit to add: If, they're from a bull-calf, no need to slice them.

I'm no expert but the last time I looked heifer-calves didn't have balls.:P

You are absolutely correct! Heifers, don't have balls. What I was getting at was if, you're frying-up full-sized, adult bull nuts, you might want to slice them.
