Has anybody had a healthier version of banana bread, and did you like it regular than the standard white flour, white sugar version? I loooooooove banana bread, with melted butter on top....yummy!!! I especially like the little wormy squiggles found in the bread when using really ripe bananas, I think they are cute! Mother to the cutest little thing in the world... I usually make my banana bread with the regular flour, sugar and put a few handfuls of chocolate chips in there just to be extra bad. Banana bread doesn't last around me house very long. I have a "healthy" Recipe somewhere around here... mostly because it only had a small amount of oil (2 table spoons) and only 1 egg (or 2 egg whites) I might be persuaded to type it in if you really want it... lawrocket 3 #13 March 24, 2006 Whole wheat flour doesn't work as well - it dosn't have the softness or chewiness to it. One thing that lowers the fat content dramatically is this: For whatever amount of oil you are to add, use only half the oil. For the other half, use applesauce. Sounds weird, but it works. So happened, whoever, was making banana bread and recommended the bananas are best when the peels are brown -speckled. I think, that's about what you are referring to? windcatcher 0 #16 March 24, 2006 Okay, after two thick slices of banana bread spread with butter, I concur whole wheat flour doesn't change banana bread much. The recipe I used called for one cup of flour and one cup of whole wheat flour, and since it doesn't change the taste or texture much, I am going to keep looking for ways to make banana bread healthier ( WHILE keeping it yummy!) Mmmmmmmm, I think this loaf is gonna be gone by tomorrow evening! And I am happy to report sightings of cute brown squiggles in my bread! Mother to the cutest little thing in the world...
