Drinking & cooking go hand-in-hand. So does ..... "other stuff" and cooking. Anyhow, about 20 years ago, I was...uh..intoxicated, and decided to make a frozen English muffin to feed my munchies. I took the frozen muffin, and instead of defrosting it first, I tried to pry it open by jamming the tip of a meat-carving knife into it while I held the muffin in the other hand. You guessed it: the knife slipped (duh) and I stabbed myself in the hand. Had to go to the ER to get sewn up. A week or 2 later it became apparent that I’d cut some nerves, so I wound up having to go to a hand surgeon to get the nerve damage repaired.
A rather expensive muffin, all in all.

Yes, plain, unadulterated white rice (like Chinese style) has a very bland taste. I personally like my rice well-flavored (unless I'm eating Chinese food). You (or shall I say, "one") can make rice pilaf, or fried rice w/spices & veggies. Or, in my chicken & rice dish I posted above, the rice takes on the flavor of the chicken & spices.

But really, why do you care? You're English; you should be used to food that blows. ;)

Here's how I do it:

1) 2 cups of water for 1 cup of rice (measure the rice first. If you do the water first, the rice sticks in the measuring cup).
2) Put the water in the pot and bring to a vigorous boil. This takes less than 5 minutes.
3) While the water is boiling, add butter or oil ( 1/4 stick?). This will keep the rice from sticking together.
4) Add salt to taste, and any other seasonings you want.
5) Once the water is boiling, add the rice.
6) Bring the whole mixture back to a vigorous boil.
7) Put the lid on, and turn the heat down to simmer.
8) Make sure you still see steam coming out of the top of the pot.
9) DO NOT, UNDER ANY CONDITIONS, LIFT THE LID.
The rice/water will lose the heat.
10) Wait 20 minutes (for white rice). It takes this long for the rice to absorb the water.
11) Leaving the lid on, take the pot off the heat and put it to one side for 5 more minutes.
12) Rice should be ready to go.

I actually think thats a very unfare statement. I lived in Scotland a while as a kid (both parents from Glasgow) and when i moved down south i heard the whole "Scottish are tight arses"

I don't just sit and eat a bowl of rice straight ... it's not that interesting. But doctored up with something (biryani, pilaf, jambalaya, etc.) it's great, or as a base for something else to be poured over it (Thai or Indian curries, Chinese food, chicken stock) it's great.

We use gas for cooking, also. Sounds like you're leaving the flame too high. Turn it to the lowest possible setting, and leave it there. All you're doing is keeping the water hot to facilitate the absorption process.

This could have come in handy when I was a student. I came in one night after quite a large one, decided I was hungry and put some chips in our archaic gas oven. Then I went upstairs to get changed and passed out on my bed. When I woke up the next morning to a really horrible smell in the house, I wandered down to ask my other 4 housemates what on earth was going on. And Mark (one of the housemates) calmly told me that I'd apparently set fire to the oven, he'd woken up about 2 hours after I'd passed out from the fumes in his room (it was above the kitchen) so he ran downstairs, had to empty the contents of a fire extinguisher we had into the oven, ran upstairs to check I was ok as my room was also near the kitchen, realised it was me who'd set the oven on fire, shouted at me for being a stupid bitch and I apparently rolled over in bed and told him to fuck off. :$ (although I don't remember that!)

we managed to blag a new oven out of the landlord though so it wasn't all bad. And from that point onwards Mark told me to wake him up whenever I got in late and pissed and he'd be happy to make me some chips if it meant I didn't try to kill him in his sleep.

Seriously, I'm not really sure what the rationale is behind using kosher salt instead of regular table salt, but the foodies seem to insist on it. Something about additives and grain size and other such mumbo jumbo.

A google search shows that people seem to be split between "there's a real difference" and "it's just marketing." Whatever. I have both at my house so I used kosher salt for this recipe, but I'm willing to bet that you wouldn't notice the difference with any other kind of salt.
