Shell666 0 #1 July 16, 2006 I don't want to toot my own horn (I already did that with the weather) but I just found the most AMAZING recipe in my recent Reader's Digest. It is SO yummy! If you're looking for a yummy treat to beat the summer heat, this is it! Do the Chunky Chicken Dressing 3/4 cup lemon flavoured yogurt (see tip below) 1/4 cup fat free mayonnaise 3 tbsp white vinegar 2 tbsp minced fresh dill 1 tbsp Dijon mustard 1/2 tsp salt 1/4 tsp pepper (I added more!) Editors note: I doubled the dressing recipe 'cause I LOVE dressing! Salad 4 cups chopped cooked chicken breasts (I used 3 breasts and BBQ'd them with some garlic powder and greek seasoning) 1-1/2 cups diced celery 1 cup chopped red bell pepper 1/2 cup chopped green onions (with white parts) 1/2 cup frozen green peas 1/3 cup chopped parsley 4 hard boiled eggs, sliced Whisk the dressing ingredients together and cover and refrigerate until ready to use. Combine all salad ingredients in a large bowl. Mix well. Add dressing and toss gently. Cover and refrigerate for at least one hour before serving. Tip: If you can't find lemon yogurt, use plain yogurt (NOT vanilla!) and add 1 tbsp lemon juice and 1 tbsp sugar to the yogurt before adding it to the dressing. Makes 6 serving (NOT!! -- it's TOO yummy!) Per serving: 250 calories, 7.2g fat (2g saturated fat), 34g protien, 11g carbs, 1.9g fibre, 214mg cholesterol, 461mg sodium SERIOUSLY good salad!!
