What's cooking?

For the summer, I bought a quesadilla maker and my kids have used it a lot for lunch while I've been at work. I just cooked up some chicken real fast in the microwave one day, cut it up and stored it in the refrigerator along with the other ingredients they'd need. They fed themselves and their friends at a pretty low cost. The only rule I had was that it all had to be cleaned up before I got home!

Other than that, pasta works well especially something like baked ziti. You need very few ingredients for that, I don't even put meat in mine.

when I get home I'll post a picture of what I made last night... but... I doubt it will go over so well with teenage boys...

It only took about 15 minutes to throw together (literally) and is full of flavor and healthy. B|

I don't know about Skymama... but I'm making a Cherry pie later for a picnic tomorrow... (I have this summers cherries to put in it too... :)

ok... this is what I made for dinner last night... it only took about 15 mintes...

it basically consists of twisty pasta, a variety of olives, Sundried tomatoes (soaked in olive oil, Artichoke hearts... that were all tossed with a little white wine... topped with Parmasean cheese (I sometimes add a bit of pesto as well... :)
Pasta is always easy... I'm not sure if this would go over too well... but cut up some Johnsonville Italian sausage... cooked up with a bit of Marinera over the same pasta is quick dirty and still not too bad...

I take a big jug of ragu (the biggest) and then add lots of cheese and cooked (and ran through the food processer) hot jimmy deans sausage. Makes about 3 decent sized tupperware dishes full. Then I freeze. I also cook up a huge batch of noodles and thaw and re-freeze as I need.
