In my mind, anything that reheats well in a microwave makes for good leftovers. While I like leftover pizza, it requires oven reheating to be really good the next day. Leftover fish ... also not so good as it's a smelly disaster in the microwave (but if it's a good piece of grilled salmon, I'll just eat it cold or put it on a bed of lettuce to make a salad out of it). I cook for myself most of the time, so I'll often end up with extra of whatever I make, so I try to make things that make for good leftovers and/or have another use (like tonight - I'm going to grill chicken, and I'll use the extra one for a chicken salad tomorrow)."There is only one basic human right, the right to do as you damn well please.
