Back in Colorado, I had some friends who hunted and used to bring me venison chops. I lightly floured and salt/peppered both sides, pan seared the chops, sliced onions over top, poured in a cup or two of water (to make au jus) then reduced the heat to simmer for a few hours. Served it with rice and green beans. Was great for awhile until I found a bullet:o

I cut the piece and was about to bite down and it went *kaplunk* on my plate...sorta grossed me out:ph34r:...so I just finished the rice and green beans and was done.:P

Funny thing is when I saw my friends again and they offered more venison chops..I said "yeah sure, but only if there aren't any bullets next time":P..they felt soo bad.

I love venison. I am a strong believer that the reason many people do not like Venison is not so much as how it is cooked, but it is becuase of the quality of the meat by the time it is cooked. Now that not to say that you can not help it with preparation methods but it sure helps to start with good meat. So many people ruin the great taste by poor handling, field dressing and shot placement, not getting it cooled fast enough, ect, ect, ect...

Then sometimes it is just chance. I shot two very fat(2 inches fat on rump) does last year that were some of the best I have ever had and one is just outstanding. Even the round is very tender and the loin just melts in your mouth.
That spot isn't bad at all, the winds were strong and that was the issue! It was just on the downwind side.

There-in, lies the secret to good venison. Proper care and preparation. Also, hanging them by the hind legs and removing the 'musk' glands from the hind legs does a lot of good. Keeping the meat at about 34-degrees in a meat locker and let them drain.
Venison, cooked properly shouldn't need 'disguises' such as apples or onions.

Is it true that the preparation you refer to might have something to do with if the venison tastes "wild" or not once cooked? my friends said that it did which is why I never experienced a "wild" taste...and it fell apart really tender. They also had a suggestion that if I did experience such, that soaking the venison in milk before flouring it and cooking it would take the "wild" taste away. :S

Absolutely. You would be amazed how few people take really good care of the Game they harvest. Many people "think" they don't like venison because they so not know what really good venison is like.

It sounds like you have some wise friends.
Not sure about the soaking in milk theory. I might have to try it sometime if I have some suspect meat.

I think I got you ALL beat for dinner tonight....

I've been doing some petitioning in the neighborhood to fight some (new) zoning restrictions on barbequeing. EVERYONE was happy to see ME (that wasn't a shishkabob in their pockets) and offered me some of their food/water/whatever.

I haven't been in my kitchen in 2 days

So you expected the poor guys to sneak up on it and strangle or stab it to death?:P

When I was a kid my old man was into hunting. I lost count of how many times I bit into lead shot while eating rabbit or pheasant. At least the shot was soft enough that I never broke a tooth.
