Comfort Food Recipes

We've had a couple threads on comfort food, but no recipe threads that I can find. I've spent the past few stress-filled days snarfing on one of my favorite comfort foods from growing up, a recipe that my mom got from my grandmother (dad's mom). Since it's fall and comfort food weather is setting in... let's share some recipes.

Here's mine (it's really mac & cheese on steroids)

Slumgullion

8 oz pasta
1 lb sausage
2 medium onions, sliced
1 green pepper, sliced
2 tbsp flour
1/2 tsp salt
1 1/2 cups milk
1/2 lb sliced American cheese

Cook and drain pasta. Fry sausage, onion, and pepper together until sausage is light brown. Drain. Stir in flour and salt, and add milk. Cook until thick. Alternate layers of pasta and cheese in a greased 9x13 baking dish. Pour sausage mixture on top. Top with cheese and bake for 30 mins at 350.

I don't know how that would work. I like the beans hot. I also throw in a small piece of salt pork in addition to the ham. That would be quite a mix with ice cream. :D

I made dinner icecream for my kids tonight.... they werent happy with the results. One day they will learn that moms pranks will always trump theirs....


Ohhh my other comfort food is just like the above but instead of noodles use toast. I think I might go make that now.

What is "comfort food" ?



The term comfort food refers to any food or drink to which one habitually turns for temporary respite, security, or special reward.

Here is some comfort food for a vegan. I'm carnivorous, I don't like bell peppers, and I love this recipe anyway...

Garbanzo Stew

6 tablespoons Olive Oil
3 medium-sized Onions, chopped
2 Bell Peppers, chopped (not finely)
8 large Garlic Cloves, minced
2 cans Garbanzo Beans, including liquid in can
1 can Stewed Tomatoes, diced
6 medium-sized Carrots, skinned and sliced
7-8 Potatoes, peeled and quartered
1 tablespoon Salt
1 tablespoon freshly ground Black Pepper
1 tablespoon Flour


- Heat olive oil in a large pot over medium heat
- Add onions, brown very well, stirring regularly
- Add peppers and garlic cloves, sauté for two minutes
- Add garbanzo beans and three cans of water
- Add stewed tomatoes, carrots, potatoes, salt and pepper
- Cover and simmer for 35 minutes, stirring every 10 minutes
- Add just enough water to flour to liquefy and stir into stew
- Cover and simmer for five minutes over low heat

Serves - 8

I saved that. I love recipes that you can simmer for a while. I bought some chicken yesterday that I am going to slow cook Saturday.



Well, you need my Aunt Edith's famous hot dog chili recipe then. Even if I don't eat any of it, the smells that fill the house are rapturous... (sigh)... It's also the best hot dog chili I've ever tasted. (I think the secret ingredient is the allspice.) Aunt Edith would always serve this when we went to visit her. She used a potato masher on the hamburger to break it up.


Hot Dog Chili

5 pounds HAMBURGER
3 large ONIONS, diced
5 tablespoons CHILI POWDER (McCormick Hot Mexican)
1-1/2 tablespoons RED CAYENNE PEPPER
1 tablespoon GARLIC POWDER
1 tablespoon OREGANO
1 teaspoon ALLSPICE
SALT & PEPPER to taste
1 (6 ounce) can TOMATO PASTE
2 cups TOMATO JUICE
Lots of WATER as it cooks

Brown hamburger and onions in a large pot – Drain fat – Add remaining ingredients – Stir well – Periodically stir as it cooks for at least three hours – Do not cover – Put in serving-size containers in the freezer until ready to use.

It is also a good topping for baked potatoes, macaroni, etc.

It's steak that comforts me. Surprisingly I have been getting REALLY good ones from the PX lately. Thank God they finally got meat and bread down there. They used to sell only stuff that came in boxes. Now I can get a really nice rib eye. Get the grill SUPER HOT. Burn it on the outside and medium rare inside. Perfect! Ocassionally I have even been going out in town to get a potato. Add some crumbled bacon, ranch, and an ice cold Corona with a little lemon juice for the perfect, or as perfect as it's going to get in iraq, meal! B| My mission on this vacation is to eat as much seafood as is humanly possible. Ray's on Peachtree.............here I come! Some poor lobster is going to get it! :D

I've got to go run five miles just thinking about that. :)

Open a tube of Pillsbury orange rolls. Pop 'em in the oven for 10 minutes. Slap some orange icing on top, and enjoy. comfort food at its finest :)

What made me think of that cookbook (one of my favorites) was your posting of your 'Slumgullion' recipe. They have a version of it that is sorta like beefaroni with tomatos and cheese and it is GREAT!!

Also, the chicken fried steak recipe is really good too. I LOVE cooking! :)
