I also love Green Beans with Pan-Roasted Red Onions: 5 cups water 1 pound green beans, trimmed 1 tablespoon olive oil 3 red onions, each cut into 8 wedges 1/2 cup fat-free, less-sodium chicken broth 1 tablespoon balsamic vinegar 2 teaspoons brown sugar 1/4 teaspoon salt 1/4 teaspoon black pepper Bring water to a boil in a large saucepan; add beans. Cook 6 minutes or until crisp-tender. Drain; keep warm. Heat oil in a large nonstick skillet over medium-high heat. Add onions; sauté 8 minutes or until browned. Add broth; cook 3 minutes, stirring occasionally. Stir in vinegar and remaining ingredients. Stir in beans; cover and cook 2 minutes. And below is the easiest gravy recipe I've ever found and it's pretty tasty: Brown Gravy 2 tablespoons all-purpose flour 3/4 cup degreased turkey drippings or low-salt chicken broth 1/4 cup water 1/4 cup dry red wine 1/8 teaspoon ground red pepper 1/8 teaspoon black pepper Place flour in a small bowl. This can be done just before making sauce or ahead of time Heat green beans and drain (drain really well) Combine the vinegar, brown sugar, bacon fat and mustard in a sauce pan. Heat slowly, stirring so it doesn't burn, just till it starts to boil slowly. (Don't take a big whiff of this...boiling vinegar is rough on the nose) Mix the sauce, onion, bacon, and cheese into the drained beans and serve immediately. Tie up the roast with butcher's string to hold the lip to the rest of the roast. Salt moderately and pepper heavily all surfaces of the roast. Then brown the roast, all sides, on a hot griddle or large frying pan. Then roast in the oven at only 200 degrees Farenheit. Use an internal thermometer and roast to 130 to 135 degrees internal temperature, the lower the temp, of course, the rarer. Let the roast rest out of the oven 15-20 minutes prior to carving. Each piece will be a juicy, perfect pink. First time we used this recipe, we swore we were flirting with food poisoning, but we've cooked it this way dozens of times, and love it. We prefer the 135 temp more than the lower, rarer temp, but it's all good. And wait 'til you make French dips with the leftovers. Ahhh. Serves 6 to 8 Green Bean Stir-Fry 1 tablespoon Soy Sauce 2 Garlic Cloves, minced 1 teaspoon Sesame Seeds, toasted 1 teaspoon Brown Sugar 1 teaspoon Peanut Butter ¾ pound fresh Green Beans, trimmed 4-½ teaspoons Olive Oil In a bowl, combine the soy sauce, garlic, sesame seeds, brown sugar and peanut butter, set aside. In a large skillet, stir-fry the green beans in oil until crisp-tender. Remove from the heat. Add the sauce mixture, stir to coat. Yield: 2 servings Apple Enchiladas Apples rolled in flour tortillas. VERY delicious, easy, and fast to make. Substitute apples with peaches or cherries if desired. Servings: 6 1 (21 ounce) can apple pie filling 6 (8 inch) flour tortillas 1 teaspoon ground cinnamon 1/2 cup butter 1/2 cup white sugar 1/2 cup packed brown sugar 1/2 cup water 1. Preheat oven to 350 degrees F (175 degrees C). 2. Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan. 3. Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes. 4. Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes. Makes 6 large tortillas. Ricotta Pie 2 pounds ricotta cheese 1 can (12 ounces) evaporated milk ½ cup flour 1 cup sugar 1 teaspoon vanilla 6 eggs 2 (9 inch) graham cracker crust shells 1 can fruit pie filling Mix ricotta; add other ingredients; mix. Pour into shells and bake at 350 degrees for 45 minutes. After cooling pies add a can of fruit pie filling (one can should cover both pies) and refrigerate. This recipe can also be made into 18 tarts. Use ½ recipe and bake only 30 minutes. Tie up the roast with butcher's string to hold the lip to the rest of the roast. Salt moderately and pepper heavily all surfaces of the roast. Then brown the roast, all sides, on a hot griddle or large frying pan. Then roast in the oven at only 200 degrees Farenheit. Use an internal thermometer and roast to 130 to 135 degrees internal temperature, the lower the temp, of course, the rarer. Let the roast rest out of the oven 15-20 minutes prior to carving. Each piece will be a juicy, perfect pink. First time we used this recipe, we swore we were flirting with food poisoning, but we've cooked it this way dozens of times, and love it. We prefer the 135 temp more than the lower, rarer temp, but it's all good. And wait 'til you make French dips with the leftovers. Ahhh. livendive 8 #16 November 22, 2006 I posted my green bean recipe in 04 and 05, might as well make it a trifecta. 4 cans french cut green beans 1 pound bacon 6 Tbls white vinegar 6 Tbls Brown sugar 6 Tbls bacon fat 8 oz grated cheddar 1 cup finely diced onion 3 Tbls yellow mustard Cook bacon so it's crunchy--cut into about 1/2" bacon bits--save 6 Tbls bacon fat. This can be done just before making sauce or ahead of time Heat green beans and drain (drain really well) Combine the vinegar, brown sugar, bacon fat and mustard in a sauce pan. Heat slowly, stirring so it doesn't burn, just till it starts to boil slowly. (Don't take a big whiff of this...boiling vinegar is rough on the nose) Mix the sauce, onion, bacon, and cheese into the drained beans and serve immediately.
