I made the mistake of having a strong cup of coffee for dinner (while doing homework). Now I feel kinda sick, and I'm drinking a cup of chamomile & hibiscus tea to try to counter the caffeine. :S

The curry is pretty easy - I use thai curry paste (I keep red, yellow, and green on hand and use whatever I'm in the mood for). Throw a spoonful in a pan (a very generous tablespoon if you like it spicy). Open a can of coconut milk - mix a little bit of the milk with the curry paste just to thin it out so it mixes easily, then dump the rest of the can in. Add maybe a teaspoon of fish sauce, then just add whatever chopped up meat/veggies you want. Cook it till the meat and veggies are done to your liking. Sometimes I throw some basil in there, and if I taste it while it's cooking and it's too hot, I just add a little bit of sugar (or Splenda) or peanut butter to cool it down a bit. Use light coconut milk and it's pretty healthy. All of the curry/coconut oil/fish sauce is available at any asian market, and even at some grocery stories (Trader Joe's has the coconut milk).

It's one of my standbys since I always have some chicken breast in the freezer and can usually scrounge up a few veggies, and everything else is always in my cabinet. I usually eat it straight, but you can put it over noodles or rice, too.

As for the vinaigrette - it's 1/2 c olive oil, 1/2 c balsamic, 1/4 c sugar or Splenda, and a bunch of chopped up red onions.

Usually closer to ricotta.

Proper Feat (from greece) is made with goats cheese, and it's YUMMO:)
