The thought is that more exposure to germs while a child leads to a greater development of the immune system cells that fight germs and that this happens at the expense of cells which are responsible for dealing with non-infectious substances. It's thought that a lack of such exposure may cause over-development of these other cells and lead to hypersensitivity to some substances, hence - allergies.
