Can you come to Texas and cook for me? :)

Actually, I have awesome cooking skills. It's just that since there's only me, I have no interest in making "gourmet" meals. Unfortunately, I eat all sorts of "crap" that has no real food value and is usually microwaveable. [:/]

Mmmm, yes, the microwave is your friend--as is that little magical window through which comes all manner of grease and other unknown edibles. Or, depending on the occasion, inedibles.

Yup. I recently bought some Tyson miniature Chicken Cordon Blue things from Sam's. I figured it was a tiny bit healthier than some of what I eat.

It told me to microwave 3 of them on HIGH for 5-6 minutes. [B]WRONG!!![/B] >:( By one minute, all of the cheese had melted out of them. By 5 minutes, they were so freakin' hard, you'd break a tooth if you tried to eat them. B|

Ceviche is a mix of seafood with cilantro, onions, jalapeno, fresh diced tomatos marinated in lime juice...it's really gooooooood:P

home-made macaroni and spaghetti sauce with ground beef and chopped tomatoes and onions, seasoned with pepper, garlic salt, basil, oregano and parsley, and topped with shredded mozzarella cheese :)

Hmm... Well, I haven't attempted to make anything yet... I was thinking noodles with butter and cajun seasoning... I haven't made it to the grocery store for real food yet, and since I'm leaving tomorrow, why bother?

The Shrimp Fritters are really good too:P

In a food processor, combine:

Shrimp
Jalapeno
Cilantro
small amount of minced garlic
Scallions
Lemon Juice

Make into patties, pan fry or bake...

then serve over Arugula and fresh "Ugly Tomato" slices....yum! yum! in my tum! tum!:)
As an afterthought...I decided to drizzle some balsalmic vinegar over the entire dish of the shrimp fritters, arugula, and tomatos...mmmmmm hmmmmmm:P

DAMN! I forgot to add the minced Ginger to the mixture...arrrrrrgh...okay, next time:S;)
