Get real key limes if you can, for authenticity. I'm not rich, so I can't :( Two cans of condensed sweetened milk (14oz / 400g) 16-18 graham crackers, crushed (not pictured) 3-ish tablespoons of sugar (not pictured) A cheese grater (not pictured) A whisk (not pictured) http://spiceweasel.net/keylimepie/pie-02.jpg Using the smallest holes on the grater, grate off the skin of the lime until you have about two tablespoons of zest. At this point, slice the limes and juice them until you have 1 full cup of lime juice. http://spiceweasel.net/keylimepie/pie-03.jpg Add eight egg yolks http://spiceweasel.net/keylimepie/pie-04.jpg Beat them together, then beat in the milk, then the lime juice. Let this concoction sit at room temperature. http://spiceweasel.net/keylimepie/pie-05.jpg Next, melt 4 tablespoons of butter. http://spiceweasel.net/keylimepie/pie-06.jpg Take the butter, add in the graham crackers with the sugar, and mix well. http://spiceweasel.net/keylimepie/pie-07.jpg Mold the mixture to the bottom and sides of your pie pan. Using the bottom of a measuring cup is a good way to get the bottom flat. Bake the crust at about 350°F / 180° C for, oh, 10 minutes or so. Pull it out, let it cool for a few minutes, and pour in the filling, and throw it back in the oven for another 10-12 minutes.
