It's EASY, too if ya do it this way: Fill saucepan 1/2 full of water and boil water. Place glass bowl over top of boiling water. Add 2 tablespoons butter (not margarine) & begin to melt Add 2 egg yolks and whisk briskly and keep whisking! Add a few drops of lemon juice Yummmmmmmm. Do NOT stop whisking or the eggs will cook and it will resemble scrambled eggs! <--That was my problem when I was first trying to make hollandaise.... Now then, if anyone has an easy way to poach eggs, lemmee know 'cause I SUCK at it. PS...slice of ham, 2 poached eggs, homemade hollandaise sauce = yummy carb-free Eggs Benedict. ~Jaye Do not believe that possibly you can escape the reward of your action.
