Accentuate, not dominate. I want the main focus to be the taste of the food, not the spicing.

So one night my friend Jose was teaching me how to can hot peppers later that night after going to bed I start getting a little action going with my wifey

her-"I'm on fire down there"
me-"that's right I'm the man"
her-"no dumb ass what do you have on your hands"
as she runs to the bathroom to rinse off:$:$


and we even wore rubber gloves while canning the peppers

You can't be drunk all day if you don't start early!

Absolutely.

However, the amount of capsaicin that will dominate is different from person to person.

I make my own Habanero sauce that some folks think is extremely hot.
I consider it to be nicely hot and a nice accent to many dishes.

Habanero chiles actually have a wonderful, unique flavor and aroma but folks that cant take too much capsaicin cant actually taste it because the flavor is overpowered by the heat.

Extreme chile heads (which I do not call myself) would find my sauce
the be mild compared to some.

I'm in the middle.

I believe that particular misfortune is referred to as "Hunan Hand" in some circles :)

Absolutely - I knew a guy back home that made his own salsa from habanero, scotch bonnet and some other pepper - would make my eyes water across the room when he'd open the jar and he ate it like candy.

BTW do not cut habaneros and handle them with your bare hands, then use the restroom.

You might get a bit tingly.B|

A girl I know did that, then accidentally touched the promised land, which then became more like a burning hell.
