1969912 0 #2 August 16, 2007 I use a lot of spices for Indian food. Try some health food stores; lot's of them have bulk spices in big jars, usually for ~1/10 the grocery store price. Whole, unground spices are best. Grind with a cheapo coffee grinder. Could you post your jerk recipe, please? EDIT: I had a ziplock baggie full of whole allspice sitting on the kitchen table onece. The next morning the bag was shredded, and the stuff was all over the house. My cats go nuts over allspice! Jerk Chicken One whole chicken (3lb of chicken breasts or thighs may be used if preferred) 6 sliced scotch bonnet peppers 3 Medium onions, finely chopped 8 Cloves garlic, finely chopped 2 Tbsp. thyme 2 Tbsp. ground allspice 2 Tbsp. sugar 2 Tbsp. salt 2 Tsp. ground black pepper 1 to 2 Tsp of the following -ground cinnamon -nutmeg -ginger 1/2 cup olive oil 1/2 cup soy sauce Juice of one lime 1 cup orange juice 1 cup white vinegar Chop the onions, garlic and peppers. Blend all of the ingredients (excluding the chicken) in a blender. Cut the chicken up in to 4 pieces Rub the sauce in to the meat, saving some for basting and dipping later. Leave the chicken in the fridge to marinade overnight. Grill the meat slowly until cooked, turning regularly.
