I rarely follow a recipe, so I just pull random things from the frig soo...

Mache greens (or mixed greens would be good too);
Sliced avocado;
Tomato medley of various colors (I love heirloom tomatos best however they're hard to find);
Endive (I prefer it over an onion);
6 boiled shrimp

Dressing: Simple. Just drizzle lemon juice and extra virgin olive oil over the top. Salt (I prefer sea salt) & Pepper. Enjoy:P

For those who don't care for shrimp but like tuna, you can substitue tuna and instead of the endive, substitute fresh asparagus spears/tips and it is yummy as well.:)

If I recall, the shrimp on that salad are the same grilled shrimp that they put on a skewer for the appetizer and the other grilled shrimp dishes, so yeah, I agree, I'd rather make it myself and know how it was prepared.
