Bought a second grill...a REAL one!

Ok, I've always LOVED charcoal or wood fired grills...but I got lazy over the last few years and bought a gas fired unit with cast iron grates...it's a good grill, but it's gas...:|
So I finally bouth the one I've been wanting...for the price this thing just plain kicks ASS! Can't beat the flavor of a chacoal or wood fired grill...hands down.

so the menu this week....
ribeye steaks (aging now!)
baby backs
tilapia (cooked in foil with orange sauce)
beef brisket (smoked with mesquite)
chicken - haven't decided on flavorings yet...
brats (with a beer steamer)
and of course lots of requisite beers!
I'm gonna get fat......:ph34r:B|

I cook on gas now, but still have a Weber charcoal grill in the garage. I drag it out from time to time just for the great taste. I love to add some hardwood, from apple and cherry to alder while I grill over the briquets. Mmmm.

Some day I'm going to get an indirect heat smoker with the side fire box, and then I'll have ribs to die for. B|

What's in the sauce you're putting on the tilapia? I need a new recipe, I'm tired of the way I've been cooking it.

Good Move-I was talking to someone recently how I screwed up and bought a grill without the smoker box-you just can't work around something like that.

You are allowed to display your man card for the next six months even if seen holding a purse outside a ladies dressing room at teh local department store.

I'll get that for you tonight...all I can remember this early is
2 tbsp orange juice
2 tbsp olive oil
salt
pepper
some other nice spices
orange slices

marinade for 30 minutes or more
spray foil with non stick (I know you have that)
put fish on seperate pieces of foil and cover with the sauce
orange slice on top of each piece
wrap/seal each piece in foil
place on grill....

I'll get the details tonight, but that's the basics...and damn is it good!:)

allright folks....here you go!

4 tilapia fillets
1 orange, sliced
1/2 cup fresh coriander, chopped (cilantro)
4 tablespoons olive oil
2 tablespoons orange juice
2 tablespoons gingerroot, chopped (the pre-chopped/mashed type in the tube also works nice)
1 tablespoon lime juice
salt and pepper

In a small bowl combine 2 tablespoons olive oil, orange juice, ginger root and 1/4 cup coriander. Season with salt and pepper. Spray 4 large pieces of aluminum foil with cooking spray and place on fish in the center of each.
Divide orange mixture in 4ths and spoon into the body of each fish. Add 2 slices of the orange inside the fish. Wrap tightly and place on preheated grill. Grill over medium heat for about 30 minutes or until fish is done. Meanwhile combine lime juice, remaining olive oil and remaining coriander in a bowl.
When fish are done remove from grill and unwrap. Be careful of the hot steam. Place on plate and pour 1/4th of the sauce over each fish.
