JENNR8R 0 #1 October 2, 2007 What is your favorite soup recipe? Now that it is October, I'm thinking about making soup. I tried this recipe tonight for my son's birthday. It came out rather tasty. I had never cooked with shallots or fresh ginger before. Carrot Ginger Soup 3 tablespoons Butter 3 Shallots, whites only, chopped 1 medium Onion, chopped 3 cloves Garlic, crushed 3 tablespoons fresh Ginger, crushed 2 pounds Carrots, sliced 1-½ tablespoons fresh Thyme fresh ground Pepper, to taste 4 cups low sodium Chicken or Vegetable Broth ¼ cup fresh Parsley 1 pint Heavy Cream Salt, to taste Melt the butter over medium heat in a soup pot. Add shallots, onion, garlic and ginger. Saute for 5-10 minutes until onions soften and smell filters into home. Add carrots, thyme, fresh pepper to taste, and broth. Cover and bring to a boil. Reduce heat and remove lid slightly. Cook until the carrots are soft. Once carrots are soft, remove from heat, add parsley. Using a handheld blender, puree the soup. Add cream and stir. bodypilot1 0 #2 October 2, 2007 20min Potato Leek Soup 5 medium/large leeks 1 large potato 1/2 cup cilantro 1/2 cup heavy cream 5 cups chicken broth 2 table spoons butter salt/pepper Cut leeks into about 1/8 slices and saute in butter until leeks slightly become brown. Add cilantro. Peel and cut potato into 1" chucks and boil in chicken broth until tender. Add the leeks and cilantro into broth and potato chuncks and add the heavy cream, boil for another 5 mins. Blend mixture with immersion blender or regular blender in small batches. Salt and pepper to taste. JENNR8R 0 #9 October 2, 2007 Have you cooked with ginger before? I had no clue how to crush it. I peeled it and put it through the garlic press. It was a bit harder to do than the garlic.
