They don't have four stomachs like the cow, that would enable them to digest grass completely. This is because they rely on speed to avoid predators, so they can't have a big, bulky digestive system. That also means that many small birds find horseshit a delicacy. There's also an old expression in norwegian that goes "eat like a horse", not only did the horses require expensive oats, they also ate alot of hay compared to the cows.
