PLFXpert 0 #51 October 9, 2008 Just tried this recently. I LOVE butternut squash soup. This sounded good and it certainly was! ROASTED BUTTERNUT SQUASH SALAD WITH CIDER VINAIGRETTE: 1 1/2-pounds butternut squash, peeled, seeded and diced 1 tablespoon pure maple syrup Good olive oil (I used Extra Virgin) Kosher salt and freshly ground black pepper 3 tablespoons dried cranberries 3/4 cup apple cider or apply juice (go for the cider, if you can!!!) 2 tablespoons cider vinegar 2 tablespoons minced shallots (I LOVE shallots) 2 teaspoons Dijon mustard (I LOVE mustard dishes!) 4 ounces baby argugula (I LOVE, LOVE, LOVE arugula! *See story below.) 1/2 cup walnut halves, toasted (I use pecans) 3/4 cup vegan parmesan cheese Preheat oven to 400 degrees. Place the squash on a sheet pan. Add 2 tablespoons olive oil, the maple syrup, 1 teaspoon salt and 1/2 teaspoon pepper and toss with your hands. Roast the squash for 15 to 20 minutes, turning once halfway through, until tender. Five minutes before squash is done, add the cranberries to pan. While the squash is roasting, combine the apple cider, vinegar and shallots in a small saucepan and bring to a boil over medium-high heat. Cook for six to eight minutes until the cider is reduced to about 1/4 cup. Off the heat, whisk in the mustard, 1/2 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Place the arugula in a large salad bowl and add the roasted squash mixture, the walnuts (pecans for me) and the grated, vegan Parmesan cheese. Spoon just enough vinaigrette over the salad to moisten and toss well. Sprinkle with salt and pepper and serve immediately (not so great later--most salads aren't.). *I overheard two guys in the produce section--obviously shopping for their hunnies--asking, "What the hell is arugula?" Recipes I know quite a few fitness and nutrition types who love this website for their recipes. I know a few people who live in Las Vegas, but I never thought of Las Vegans as healthy eaters. Still, that's what I make myself (hardly takes any effort and serves the purpose) when I'm hungry. Otherwise, Chef-boy-ar-Billy makes stuff. Have I said before a man who cooks is SUPER sexy?
