i have some salt pork left over from my unsuccessful attempt at clam chowder and was wondering what the hell else i would use that for. also in the fridge that i have no current plans for but will use for something soon are mushrooms, 3/4 onion, celery and some cheeses. my freezer is half full of various wild birds and ruminants which can often times be treated like chicken or beef as well as tuna, halibut, and crappie. a friend of mine is moving soon and is giving me his freezer full of wild birds and game. we are getting orders out of here and will be moving next summer and need to eat all of the frozen goods by then and i don't want to keep making the same dishes over and over.

render fat from the salt pork and saute with the mushrooms, onions, garlic and maybe some spinach. remove from heat and add half blue cheeze and half Mozzarella or provolone (or any white cheese that is mild). Just add enough cheeze to make mixture stick together.

This is a great filling for Beef (filet or pounded sirloin, chicken or pheasant or pork tenderloin. must be something that can be baked broiled.

if its in filet just cut pocket and stuff in something that was pounded out then roll up filling.

If baking (broiling will burn topping) top with mixure of Parmesean, salt, pepper and plain bread crumbs. coat mixure just enough with olive oil to make it so it will stick to the top of meat.
