LisaH 0 #1 May 9, 2009 A friend of mine just got back from a fishing trip and he gave me a bunch of trout. I've never had it before and have no idea what to do with it. He was kind enough to cut the heads off for me because I hate fish eyeballs staring at me. There are too many websites. Does anyone have a good recipe? Oh, and I don't have a grill. Thanks! Cleaned (gills, guts, and blood-line removed) and optionally filleted. Dipped in flour and pan-fried in butter. Yum! Squirt a little lemon on if you want to be fancy. I had been told to leave the tail on when cleaning the fish, because it made it easy to turn the fish in the frying pan. Trout is great, but all the bones are a PITA. lawrocket 3 #16 May 9, 2009 Start with aluminum foil - a big piece of it. Spread som olive oil on it to keep fish from sticking. Rub a little salt on the cavity and lay fish on pouch. Grind some pepper on it. Get a beer. Have a sip. Squirt some lemon juice and add about 1/4 lemon on top. Drink more beer. Sprinkle fish whatever spices look good - garlic, dill, mustard. By now you should have opened another beer. Drink some. Now that the fish is ready, add some brocolli or asparagus or spinach (swiss chard works nicely, too) to the mix. Hell, toss some rice in there is you want! It's all good! Heat an oven to about 375. Drink beer while it heats up. Seal the foil. Toss the pouch in the oven for 20-25 minutes. While cooking you should be drinking beer and/or making a sauce. An aioli is nothing more than garlicky mayonaisse. If you add some relish to it, it's aioli tartar sauce, which goes nicely with fish and whatever vegetable (and also pairs nicely with a Firestone Double Barrel Ale.) After done, pull out of oven. Let rest for a couple of minutes. Open pouch and plate your meal. It's delicious! All the flavors blend and yet are distinct. My wife is hotter than your wife. Stuff with onions and chunks of butter Coat in crushed salt and vinegar chips Wrap in foil and BBQ (guess you'll have to get one!) I'm not a fish girl but I loved it prepared this way.
