Rainbow trout

A friend of mine just got back from a fishing trip and he gave me a bunch of trout.

I've never had it before and have no idea what to do with it. He was kind enough to cut the heads off for me because I hate fish eyeballs staring at me. :D

There are too many websites.

Does anyone have a good recipe? Oh, and I don't have a grill.

Fried? In butter? ACK Isn't there a way to bake or broil it?

What seasonings are used on trout?

Glass covered dish in the microwave..... butter on top.... a couple slices of fresh garlic in the body cavity.... about 4 minutes for a 1 pound trout... nummers...

Cleaned (gills, guts, and blood-line removed) and optionally filleted. Dipped in flour and pan-fried in butter. Yum!

Squirt a little lemon on if you want to be fancy.

When I was a kid, we often went trout fishing at a state park. We typically ate trout at least once a day while there. I had been told to leave the tail on when cleaning the fish, because it made it easy to turn the fish in the frying pan.

Trout is great, but all the bones are a PITA. I've heard some people claim to be able to fillet them, but I've never seen it done without wasting most of the fish (which doesn't mean it's not possible).

As a seasoned trout poacher I would recomend grilling over oak.
I always make a paste out of butter,garlic, almond and just a mention of lemon
and parsley. I stuff the paste in the trout an wrap in foil,
cook over the oak chips, serve with french fries an lashings of alioli

That sounds so yummy. Especially with garlic. I have no way to grill it though.

Start with aluminum foil - a big piece of it. Spread som olive oil on it to keep fish from sticking.

Rub a little salt on the cavity and lay fish on pouch. Grind some pepper on it.

Get a beer. Have a sip.

Squirt some lemon juice and add about 1/4 lemon on top.

Drink more beer.

Sprinkle fish whatever spices look good - garlic, dill, mustard.

By now you should have opened another beer. Drink some.

Now that the fish is ready, add some brocolli or asparagus or spinach (swiss chard works nicely, too) to the mix. Hell, toss some rice in there is you want! It's all good!

Heat an oven to about 375. Drink beer while it heats up. Seal the foil.

Toss the pouch in the oven for 20-25 minutes. While cooking you should be drinking beer and/or making a sauce. An aioli is nothing more than garlicky mayonaisse. If you add some relish to it, it's aioli tartar sauce, which goes nicely with fish and whatever vegetable (and also pairs nicely with a Firestone Double Barrel Ale.)

After done, pull out of oven. Let rest for a couple of minutes.

Open pouch and plate your meal.

It's delicious! All the flavors blend and yet are distinct.

Read through all the replies. I grew up stream fishing and cooked a lot of rainbow trout with my mom.

Her best recipe.

Stuff with onions and chunks of butter
Coat in crushed salt and vinegar chips
Wrap in foil and BBQ (guess you'll have to get one!)

I'm not a fish girl but I loved it prepared this way.

Cast iron skillet, heat on med high heat till water drop sizzles in a ball when dropped in.
Add enough olive oil to coat.
Rub fish with olive oil
Rub with cajun spice
Blacken in skillet about 1min per side, depending on thickness.

Remove fish, add chopped onion, carmelize, serve over fish.

Pick a nice veggie dish

Eat

Rainbow trout has great meat and you don't need to add a lot of extras make it taste good Those fish wrapped in bacon look good but I'd reserve it for another more bland species like bass.
