I have a VERY nice New Braunfels smoker that will take an entire slab of a 50 pound Chinook...( been there and done that. If you get some salmon.. bring it over... I also have a stack of Alder that I collect every winter when the wind storms hit... just for smoking the salmon...Oh and August is salmon season on the Columbia River. I love the flavor of fresh caught wild salmon... there is absolutely no need to adulterate the flavor with bacon....On the flip side there is a time and place for bacon.. to add flavor to shitfull cuts of meat.... and I think I will go fry some up for breakfast..... but on chinook salmon.........
