I like the suggestion of a local farm. I would argue "fresh" is no better than frozen immediately. There is a silly tendency toward "fresh-never-frozen" vs. otherwise with any food. The only way that is better is if the bison were slaughtered just before you cooked it. Otherwise, best to freeze it for a night and avoid potential parasites--this goes for all meat from anywhere, especially if one likes their meats rare (I heart sashimi). That is a little far as I dont have room for a half a bison to make the trip worthy ;) Now if someone in the Chicago area knows of one, then by all means I would much rather go that route. I know trader joes has the buffalo ground, but I am looking for steaks. I found one meat market that has it frozen but it is $15.99 a lb for sirloin. Trying to see what my other options are. I am looking specifcally for bison/buffalo as it is a fantastic addition to my current eating :-) much much better for me then steak. I have this buffalo chili recipe that is absolutely phenominal, and not nearly as tasty with beef. And a buffalo meatloaf recipe with such wonderful flavor! Just remember not to cook steaks or roasts more than med rare, or they are gross. To those that didn't like their buffalo burgers, they were probably over-done. Cooked the right way, buffalo has a much better flavor than beef and is a lot healthier for you, much leaner. We get 1/2 cow every year too (amazing how much the men in this house can eat), but we cook cow vs. buffalo differently. It had been awhile and I decided I wanted to go get some. Big mistake, mygod it was wonderful!!!! I agree on the meat should be no more cooked then Medium/Medium Rare EVER...some stuff is ok Med-Rare but not ground anything. Bluck I have made a few major lifestyle and diet changes, with this I am finding some of the most amazing and wonderful foods :) Buffalo I knew of, but couldnt afford. However it is become a treat meal for me. I have a friend that is part of a group that makes one delivery from farm to a single residence and then those in the community arrange to meet with their neighbor on a set day to pick up. As for Whole foods, I am trying to avoid having to go there as I know there are better options price wise, not to mention the one by me is kind of flaky with actually having bison in the store. I am looking for the best possible option and would rather find it from a private meat market.
