Literary advice needed, HELP!

I'm writing a book about my 34 years in the fire service. It's 50 of the funniest firehouse stories during my career.

I'm not a book guy, but I have to ask; why 50?

Do you already have 50 documented and laid out or is that simply a number you've pulled out of a hat because it sounds doable or is it just sort of quasi-random?

I think if I had 50 different stories, I'd be looking to find ways of cutting them back to the 10 or 12 absolute best ones.
